Ashley McCarthy, self-taught maverick chocolatier and professionally trained chef, is available to host chocolate demonstrations for groups, charities and organisations at his premises or yours. He he will show and tell you everything you could ever dream of about chocolate.
You can also catch Ashley regularly at various regional food and chocolate festivals and fairs in the region with his side kick (and son) Ben.

Upcoming Events
Ashley will be at the York Chocolate Festival again this year hosting a ‘live’ chocolate demonstration. Throughout the festival Ashley will be in the bar tent sculpting (not drinking!) a very special Chocolate sculpture just for this years festival…. Pop by and see what the piece is going to be and hopefully see it when its finished on the Sunday… He will be there to chat to and show you simple chocolate techniques as well as a few of the difficult ones as he outs together this very special sculpture for 2025.
Fairfax will also be hosting a stall within the festival selling our full range of Fairfax Spirits and Chocolate products….
Throughout the Show, Ashley will be in the Game Theatre as chef/compare for all the chef demonstrations taking part each day… call in a watch a whole host of local and well know talent from the region cook Game dishes in the theatre stage whilst Ashley tries to keep order and control 🤣
Our team will be at in the main food hall showcasing our range of Fairfax Spirits and Fairfax Chocolates, pop by and sample our goods and see what you think!
